    Ungava Gin

    Crafted with six Arctic botanicals from the northern Quebec, Ungava gin will make any cocktail uniquely wild. The rare botanicals are hand-foraged, dried, and then slowly steeped for five weeks for a natural extraction of complex flavour and colour. • 1 oz. crème de menthe
• 1/4 oz. simple syrup
• 3/4 oz. lemon juice
• fresh mint or lemon zest

Place all liquid ingredients in a shaker,
add ice and shake vigorously.

Fine strain into a chilled old fashioned glass and garnish with lemon zest or fresh mint leaves.

· 1 oz. Ungava Gin
· 0.5 oz. Grapefruit Juice
· 0.25 oz. Simple Syrup
· 3 oz. Champagne
· Grapefruit Twist
· Ice cubes

1️⃣ Pour gin, grapefruit, and simple syrup into a shaker with ice.
2️⃣ Shake vigorously.
3️⃣ Fine strain into an ice filled wine glass.
4️⃣ Top with champagne and garnish with grapefruit twist.

For your holiday festivities, serve up Ungava’s For your holiday festivities, serve up Ungava’s aromatic arctic botanicals with a generous plateful of salmon gravlax. 

• 1 ½ cup coarse salt
• ¾ cup raw sugar
• ⅓ cup Ungava Gin
• Zest of 2 lemons
• 12 juniper berries, ground
• Whole filet of salmon (approx. 1.4 kg / 3.1 lb)

Directions🧑🏼‍🍳
1. In a bowl, combine the salt, sugar, Ungava Gin, lemon zest and ground juniper berries.
2. Place a large piece of plastic wrap on a baking tray. 
3. Place the cleaned filet of salmon skin side up onto the plastic wrap and cover it with half of the aromatic salt mixture. 
4. Turn the filet around and spread the rest of the salt mixture on top. 
5. To prevent air from coming into contact with the fish, ensure it is fully covered in the salt mixture, then tightly wrap it in plastic film.
6. Place a second tray on top of the filet and put a large, heavy object on top (e.g., a couple of bottles of tonic or soda, to be enjoyed with the fish later on!)
7. After 24 hours, take a peek at the filet. Is it firm to the touch? If you’re not sure, slice a small portion off, rinse and taste it. 
8. It might require more curing time, depending on the thickness of the filet and how it was prepared. If it isn’t cured yet, put salt mix onto the newly exposed surface, wrap it back up and place it back in the fridge under the weighted tray. 
9. Check it again, every 12 hours until it is cured to your liking. 
10. Once cured, unwrap and rinse under cold water, then pat dry with a kitchen towel 
11. Once the filet is dry, splash it with a bit more gin before you wrap it and put it back in the fridge. 
12. For serving, thinly slice the Ungava gravlax at a 45-degree angle. 

The perfect make-ahead appetizer, that’s sure to be an instant classic.
